The $119.99 is for platinum only. Amazon Chef's Choice 130 Much discussion about different models all over the internet. This model 130 is the one Cook's Illustrated/America's Test Kitchen chose. It is not for putting a new edge on a bad knife. First slots sharpen, second slots are not mechanized and manually hone, third slots strop. Different combinations are used to put a different edge on the knife depending upon use (i.e. slick sharp for paring or micro serrated for more bite).The 120 model, from what I gather, has 3 mechanized slots. The first takes off the most metal, the second finer sharpening (perhaps like slot one of the 130). The third slots are the stropping. So, there is no honing on the 120. These models mentioned are not for 15 degree knives (like Japanese) but are for the usual western 20 degree bevel. Home & Garden Deals Amazon Coupons Original post

It went down about a week ago to this price and only lasted for about 12 hours. I received mine a few days ago and love it for both western style and asian style knifes. I have the high end shun knifes and it takes me about 5 minutes to put a edge on knifes that shaves hairs with little to no effort.... |
